Cassava is a root vegetable that is well loved throughout the Caribbean and many West African regions, this is perhaps due to its culinary versatility and low maintenance growing needs. It’s a tropical root crop in the Euphorbiaceae plant family with origins in South America, specifically across the regions of Brazil and Peru, with domestication happening 10,000 years ago by the Indigenous peoples of those lands. In this profile we’ll learn about this starchy staple food and its roots in Indigenous foodways.
